Description of the research activity:

This research project delves into the interactions between fermented food microbiomes and the human gut microbiome, aiming to uncover how these interactions can affect gut health and systemic immunity. The focus is twofold: (i) to characterize the microbial compositions of various fermented foods, establishing detailed profiles of microbial species and their functional roles in food properties and health benefits. (ii), to explores the effects of these microbiomes on the gut microbial ecology through in vitro models like the Intestinal Microbial Simulator. A key innovative aspect of this research is the study of exosomes and microRNAs from fermented foods, examining how microbes use exosomes to transport functional molecules that potentially affect gut health. These studies aim to map out the miRNAs present within these exosomes, identifying their origins—whether microbial or food—and their roles in regulating host gene expression related to inflammation and gut barrier functions.
